Indulge in the tantalising flavours of our golden, flaky curry puff recipe, bursting with aromatic spices and a delightful filling.
Filling
Ingredients:
Meat 300g
Potatoes 500g
Onion 400g
Curry powder 3 tablespoons
Chilli powder 1 teaspoon
Curry leaves 2 whole sprigs
Cooking oil 4 tablespoons
Salt 1/2 teaspoon
Pepper A dash
Method:
- Marinate diced meat in curry powder, chilli powder, salt and pepper.
- Peel and dice potatoes. Boil in hot water for 5-8 minutes to soften slightly.
- Peel and dice onions.
- Heat oil in pan. Add onions and fry till golden brown.
- Add meat, potatoes and curry leaves to onions and fry till meat is cooked.
- Set aside to cool.
Pastry dough
Ingredients:
Plain flour 300g
Self-rising flour 300g
Vegetable shortening 300g
Egg 1
Egg yolks 2
Salt 1/2 teaspoon
Water As necessary
Method:
- Melt shortening in pan and cool.
- Pour shortening into dry ingredients.
- Add beaten egg.
- Knead into a dough. Add water if dough is too dry
- Roll out dough with a rolling pin on a floured surface to about 0.4cm thickness.
- Dip a 4-inch/10cm circular cookie cutter into flour and then cut out dough circles.
- Place a tablespoon of filling into the circle and fold in half to form a semicircle.
- Pinch edges together until completely sealed.
- Pleat the edges using your thumb. Place onto a tray lined with baking paper.
- Repeat until all the pastry dough and filling has been used.
- Whisk egg yolks and brush onto top of unbaked curry puffs using a pastry brush.
- Bake in pre-heated oven at 180°C for 25 minutes.
